Hoot Owl Cupcakes

I love Pinterest! I found a picture of some cupcakes I thought my girls would like. I used my favorite ‘from scratch’ chocolate cake (recipe to follow) and baked and cooled the cupcakes. Next came the fun part. I opened a package of Mega Stuff Oreos, a package of chocolate chips, a handful of Cheerios, some almonds and a container of chocolate frosting.

Let me tell ya the process wasn’t as easy as I thought. The white icing would stick to my knife as I cut through it, until I got the bright idea to put the knife into a cup of hot water between cuts. Mine weren’t as pretty as the ones on Pinterest. It didn’t matter that much.

They were a hit with Brooke!


Here’s the recipe I promised you.

Chocolate Cake

Dump all ingredients into a mixer:

2 cups flour, 2 cups sugar, 2 tsp. baking soda, 1 tsp. baking powder, 3/4 cup cocoa, 1 cup milk, 2 eggs, 1 tsp. cinnamon, 1/2 cup softened Imperial margarine, 1 cup cold black coffee. Mix all together. Mixture looks runny and thin. Pour into a 9 x 13 inch pan and bake for 35 minutes or in a cupcake pan for 20 minutes at 350 degrees.

(This recipe is so good and moist, you really don’t need frosting!)
